Raw GF Vegan Recipe: Carrot Cake with Cream Cheese Icing (2:125 and 3:125)

Raw Gluten-Free Vegan Carrot Cake w/Cream Cheese Icing (recipes 2 and 3 of the 125 new raw recipes I will make during 2012)
adapted from Moira Nordholt (The Feel Good Guru) as found in Forks over Knives: The Plant-Based Way to Health

1 cup organic raisins (I use Braga Organic Farms – the plumpest ever!)
2 medium to large carrots, finely grated
1 1/2 cups raw walnuts, chopped finely in food processor (I use Braga Organic Farms)
1/2 cup organic shredded coconut
1 tablespoon raw tahini (I use Artisana)
1/4 cup raw honey or maple syrup (or less–usually just a splash will do)
1 teaspoon vanilla extract
Pinch of cinnamon
Pinch of Nutmeg
Pinch of ground Cloves
